Oven baked sausages with vegetable and tomato sauce
Hot, hearty and packed full of tasty sausages, this beautiful one-pot dish is baked in a thick vegetable and tomato sauce to produce a warming and satisfying family meal.

Frylight Cooking Spray
8 pork sausages
1 onion, thinly sliced
1 clove garlic, minced
400 g can chopped tomatoes
150ml white wine
150ml beef stock
250g new potatoes, halved
1 red pepper, seeded, sliced
1 courgette, halved lengthwise, sliced
12 cherry tomatoes
2 carrots, sliced
1 tsp dried oregano
- Preheat oven to 180°C
- Spray a large frying pan with Frylight to cover the surface. Put on a medium heat and wait until Frylight is clear. Brown the sausages for 7-10 minutes, turning, until evenly browned. Transfer to a 20cm x 30cm shallow, ovenproof dish.
- Using the same pan, add a few more sprays of Frylight then fry the onion and garlic for 5 minutes until starting to soften. Add all remaining ingredients and season to taste. Bring to boil and pour over the sausages.
- Cover dish with foil and bake for 35 minutes.
